Recipe: Slimming World Mini Veg Frittatas

This is a great Slimming World Recipe that is syn free!! You can add up to 42g of Light Cheddar as part of your HEX A. Bursting with robust flavours this Italian dish is perfect for alfresco dining and lunchboxes too! Most vegetables would work well so swap and change depending on your mood or the time of year.  I used British Lion Eggs in this recipe and discovered they have a wide range of  delicious omelette recipes on their website, defiantly worth a look as eggs are free on extra easy!  By putting each frittata in a muffin tin it means you can make 12 mini fritatas, great for a mid afternoon snack!
