Pork & Chorizo Burgers

I wanted to make something a little differed.  I came up with this recipe and it turned out great! Delicious smoky pork burger with chorizo and spices, great in a brioche bun with chunky crunchy chips.


You will need:-

250g chorizo, outer casings removed, cut into 1-inch pieces
700g  pounds ground pork
2 garlic cloves, chopped
2 teaspoons Worcestershire sauce
1 teaspoon cayenne pepper
1 teaspoon smoked paprika
1 egg yolk
Salt & pepper
Mature Cheddar Cheese

Method:-

Place the chorizo in a food processor and process until finely chopped 

Put in a large bowl and add the pork, garlic, Worcestershire sauce, cayenne pepper, paprika and egg yolk and mix together. 

Form the mixture in your hands into burgers big enough for your buns, remembering that there will be some shrinkage. 

I cooked my burgers under the grill, but you could use a griddle pan or BBQ, for around 10-15 minutes.  Make sure you turn the burgers regularly. 

I covered each burger with cheese and put it back under the grill to melt, but you could just put the cheese in when constructing your burger.
