7 Day Slow Cooker Challenge! Day 7- Breakfast

Read Day 1 of the slow cooker challenge if you don't already know why and what I am doing!

It is all very well and good coming home to a slow cooked meal, but you can also use it when you're at home as well. even if you are in bed!  This got me thinking about how to create a breakfast that is ready by the time you wake up in the morning, so all you need to do is serve it! This breakfast is packed with sausage, bacon, tomatoes, mushrooms, beans and eggs,  the same as a fry up with far less effort!

You will need:-

4 sausages, chopped
6 rashers of bacon, sliced
4 large flat mushrooms
4 eggs
1 tin of baked beans (or reuse any left over BBQ Beans!)
1 tin of chopped tomatoes
salt & pepper
1 tsp smoked paprika
1 tsp dried basil
1 Garlic clove, chopped

Method:-

Add the sausages, bacon, beans, tomatoes, salt, pepper, paprika and basil into the slow cooker bowl and mix

Pull the stem off the mushrooms

Sprinkle some garlic on the inside of the mushroom and then crack an egg in each. 

Place these on top of the mixture in the slow cooker, leave on low for up to 9 hours!

Serve with some cheese on top, or even some hasbrowns (if you can be bothered to make them in the morning!)
