As soon as the summer warmth leaves the air outside and the hint of autumn crispness returns, I make a batch of this soup. Every year, without fail. It is so easy to make and tastes just like the real thing. The branded version has lots of sugar in it, so I wanted to make my on Slimming World alternative. It is really easy to make and as simple as adding all the ingredients to a pan

You may look through the list of ingredients and wonder how it could be possible to taste like the real thing, but trust me it does!

You will need:


2 tins of chopped tomatoes
1 tin of baked beans
4 small pickled onions (or one large one), chopped in half
1/2 pint vegetable stock
a pinch of salt & pepper
1 tsp Worcester sauce 
1/2 tsp sweetener

Method:

Put all ingredients in a large saucepan and bring to boil.

As soon as the soup boils, reduce the heat to the lowest and allow to simmer.

Cover and leave for 15 mins to simmer gently.

Once cooled slightly, add to a blender and blitz until the mixture is completely smooth.

Can be kept in the fridge in a sealed container for up to one week.
