500 g lean turkey mince
1 carrot, diced
1 red pepper, diced
1 onion, diced
6 mushrooms, chopped
1 tin baked beans
1 tin chopped tomatoes
4 tbsp tomato purée
1 tbsp mixed herbs
1 garlic clove, crushed
salt and pepper to taste
1 box lasagna sheets
2 large tubs fat free cottage cheese
50g grated mozzarellaMethod-
In a large frying pan, fry off all the veg until cooked.
Add the turkey mince and cook through, break up any bigger chunks
Add the baked beans and chopped tomatoes and mix through.
Sprinkle in the herbs, paprika, salt & pepper. Allow to simmer for around 10 mins.
In a medium sized dish layer the turkey mixture then the lasagne sheets. On top of the lasagne sheets spread the cottage cheese and repeat until all the mixture is used.
Spread the grated mozzarella on the top layer and bake in the oven for around 30 mins, or until the top is golden and the lasagne sheets cooked through.
