7 days of Slimming World Friendly Freezer Meals | Slimming World




One of my most popular posts is "How to prepare 7 Slimming World friendly freezer meals in under 1 hour". I put in a LOT of work putting it together, so I am really glad it was so greatly received! It is such a basic but practical idea, prepare all your meals ahead then freeze or refrigerate them ready for the week ahead. Just take out the evening before you want to eat it, then just stick it in the oven or slow cooker the next day.  Some of the dishes can be cooked from frozen, so you always have a backup in the freezer. Make sure you read through the post thoroughly, including all the notes! Download a shopping list here

Notes:-
  • Make sure you have all the ingredients.  Download my shopping list, don't forget to tick off anything you already have in the house!
  • When you're ready to start making, ensure all your ingredients are out and ready
  • Get some large zip up freezer bags and label them with each meal. It is easier to have everything to hand once you start making!
  • Recipes all serve 4, unless otherwise stated (or 2 with left overs!

  • Any recipe where anything has to be cooked make sure you cool it to room temperature and then chill it in the refrigerator before freezing
  • Make sure when defrosting the meals you take them out the night before and defrost in the fridge, never leave meat to defrost at room temperature
  • If you are a vegetarian you could easily substitute any chicken for quorn




Heinz Style Cream of Tomato Soup

I have seen similar recipes all over SW pages and forums, but I originally found one here.  I have added my own twist and believe this is the tastiest, healthy tomato soup you can eat! It can be kept in the fridge for up to 7 days, just reheat to serve

You will need:- 
2 tins of chopped tomatoes
1 tin of baked beans
4 small pickled onions (or one large one)
1/2 pint veg stock
salt & pepper
1 tsp Worcester sauce 
1/2 tsp sweetner

Method:- 

Put all ingredients in a large pan and bring to boil.

Simmer for 20 mins or so then blend until completely smooth

Allow to cool completely and then keep in a sealed container for up to 1 week.

To Cook and Serve-

 Reheat in microwave or over the hob

Creamy Shredded Chicken Pasta

Healthy Extras- A if using cheese to top

This shredded chicken pasta is a great dish.  Filling, delicious and syn free- the best kind of meal.

You will need:- 


4 chicken breasts
1 tsp Italian herbs
handful of chopped mushrooms
Sweetcorn
salt & pepper
200ml chicken stock
1 tbsp fat free fromage frais (to add at the last part of cooking, not the bag)

Method:-

Place raw chicken in ziptop freezer bag or container. Mix sauce ingredients (apart from the fromage frais) together and add to bag. Remove air and seal bag.

To Cook and Serve-

Defrost overnight in the fridge,  In the morning add the contents of the bag or container to a slow cooker set on low. Cook for 6 to 8 hours (or for 40 minutes in the oven on a medium heat)  Shred the chicken once cooked, then cook up some pasta.  Mix the shredded chicken with the cooked pasta and stir through the fat free fromage frais.  I topped with 40g low fat cheese and served with salad

Bacon & Cheese Stuffed Hasselback Potatoes

Healthy Extras- A
You will need:- 

4 slices of bacon, all visible fat removed, sliced
Sea salt and freshly ground pepper
1 clove garlic, finely chopped
40g extra light cheddar cheese per potato, sliced
low calorie cooking spray

Method:- 

Using a sharp knife, make crosswise cuts in each potato, about 1/8 inch apart, stopping about 1/4 inch from the bottom.

Cook in the microwave for 5 mins on high

Break the cheese up and stuff in alternate slices of the potato, then top with the bacon and garlic. Spray with low calorie cooking spray.  Wrap in tin foil and leave in fridge for up to 48 hours

To Cook and Serve-

Place potatoes on baking tray. Cook in the oven on a medium heat for 30 mins, open the tin foil for last 10 mins of cooking, serve with salad

Lemon Pork & Pepper Kebabs


Tastes lovely and summery and is super versatile.

You will need:- 
500g diced pork 
fresh coriander chopped
fresh mint chopped
1 tsp cayenne chilli pepper
1 lemon (or lime) juice 
3 garlic cloves crushed
Salt and pepper
1 or 2 green peppers cut into large chunks
wooden skewers soaked in water for a few minutes

Method:-

To prepare

Add the pork and peppers to the kebab stick.  Add the rest of the ingredients to the bag and place the kebabs inside.  Shake about to cover the kebabs with the juices and flavours, seal.

To Cook and Serve-

Defrost overnight before cooking, cook on a griddle pan or BBQ until the meat is cooked right through.  I served with salad and boiled potatoes.

Pizza


Knowing that you have a pizza in the freezer that you can just throw in the oven is a great fall back meal, especially when it's not that naughty!

Extra Easy syn value- Syn Free

Healthy Extras- A & B

You will need:- 
75g wholemeal bread mix
60-70ml of water
Knead according to instructions
42g mozzarella cheese
Extra toppings of your choice 
5 tbsp passata
1 tsp garlic powder
salt & pepper

Method:- 

Take 75g of the wholemeal bread mix, save approximately 5g for dusting

Add 60ml of water and mix to form a dough.

Knead and prove according to pack instructions and roll out into a pizza base. This, when cooked, will make a base of approximately 115g in weight, which is 2HEBs (I shared half the pizza, so used my 1 HE)

Mix the passata, garlic, salt and pepper together.  Spread over the pizza base. I used a pizza tray and wrapped the pizza in the tray with tin foil, then froze. 

Cook from frozen for 25 mins on a medium heat, or until cooked and bubbling with cheese

Spicy Sausage Casserole

Extra Easy syn value- Syn Free

Healthy Extras- None

You will need:-

1 Mixed Italian herbs
10 low syn sausages (I used Heck Chicken Italia, 1/2 a syn each)
1 carton of passata
1 tbsp tomato purée
1 tin mixed bean salad
1 onion
1tsp cayenne pepper
1 chopped chilli
1 tsp smoked paprika
Cherry tomatoes, chopped
Mini carrots
baby corn
1 garlic clove

Method:-

Chop the onions, garlic and tomato and place in the bag.  Add the sausages.  Mix all the rest of the ingredients together in the bag and seal.

To Cook and Serve-

Defrost thoroughly if freezing before cooking, cook for 3 hours on high in a slow cooker, 7 hours on low or for 45 minutes in the oven

Garlic & Herb Chicken Nuggets


In order for this to be a healthy B you would need to have 1/2 of the chicken nuggets, so make sure you cut an even amount!  If you are cooking for more people add more chicken and just remember to allow 60g of breadcrumbs for yourself

Healthy Extras- B

You will need:-
120g wholemeal bread, bread-crumbed
1 tsp granulated garlic
salt and ground black pepper
2 boneless skinless chicken breasts, cut into nugget size pieces
1 tsp Italian herbs
1 large egg

Method:-

Add the salt, pepper and herbs to the breadcrumbs.  Dip the chicken chunk in the egg and then the breadcrumb mixture, get an even coating.  Repeat with all the nuggets. 

Lay out on a small baking tin so they aren't touching each other, wrap in foil and put in the freezer

To Cook and Serve:-

Defrost overnight, cook in the oven for 25 mins on a medium heat until crispy and cooked through.  Serve with SW chips and beans!

Turkey Meatloaf with Ketchup Crust


This was something different for me and I loved it!  Great to serve with chips, veg, salad - or anything!

Extra Easy syn value
You will need:- 
500g extra lean turkey mince
1 medium onion, finely chopped
2 garlic cloves, minced
2 teaspoons fresh thyme
1 large egg, lightly beaten
1/4 cup finely chopped fresh parsley
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
4 tbsp passata 
1 tbsp sweetner
1 tbsp cider vinegar

Method:- 

Mix the passata, cider vinegar, Worcestershire sauce and some salt pepper to make the ketchup. Mix all the other ingredients together and need until combined. 

Line a loaf tin with tin foil and spoon the mixture in and press down. Brush half of the ketchup mixture over the top of the meatloaf and keep the rest for when it's cooked. 

To Cook and Serve:-

Can be cooked from frozen, cook in the oven for 30 mins on a medium heat.  Serve with your choice of potato/chips/salad
