Slimming World Recipe: Campfire Stew Pies

The campfire stew recipe has been knocking about for a long time and is very popular amongst SW members.  It is packed with lots of veggies and is easy to make by putting everything in the slow cooker! I wanted to put my own stamp on it and created this delicious pie version that is filling, delicious and a real winter warmer!


Makes 4 Pies

You will need:-


1 small pork or gammon joint with all visible fat removed.
1 white onion chopped.
1 red onion chopped.
1 red pepper chopped.
1 green pepper chopped.
1 potato diced finely.
3 garlic cloves finely chopped or crushed.
1 tin of baked beans.
1 tin of chopped tomatoes or 8 tablespoons of tomato purée .
1 tbsp paprika.
1 tbsp mixed herbs.
1 chilli de- seeded and finely chopped or 1 teaspoon of medium chilli powder.
4 large potatoes, peeled and chopped into cubes
40g extra light cheddar per pie

Method:-

Place your joint of meat in the base of your slow cooker then add all diced vegetables around the sides and top with the beans, tomatoes, herbs and seasoning.

Heat on low for 7 hrs

Take the meat out and shred apart with 2 forks, then put back in the slow cooker to mix everything together


Place the gammon mixture in a pie dish and top with mashed potato & 40g extra light cheese and bake in the oven for 10 mins on a high heat until the cheese is bubbling
