Creamy Chicken Hot Pot | Slimming Friendly



On my walk to work this morning I got absolutely drenched, I was freezing cold and it felt like winter.  I find that what I want to eat is really affected by my mood, and the first thing I craved was something creamy, hot and comforting.  

It is really simple to make, and is also extremely delicious! A hot pot is basically a casserole with sliced potatoes on top. I also added some cheese on top of mine to may it extra delicious!

The trick to using Quark or Fat Free Fromage frais when cooking is to add it at the end of cooking and to make sure that it doesn't overheat or boil.

You will need-


500g Diced chicken breasts
4 rashers or bacon, chopped
1 red pepper, diced
1 small tin of sweetcorn
250g mushrooms, chopped
1 Onion, finely diced
1/2 litre of stock
200g quark
6 tablespoons of fat free fromage frais
Enough sliced potatoes to cover your dish
Salt & pepper
1 teaspoon tarragon
1 garlic clove, crushed

Method-


In a saucepan bring the stock to the boil and season with salt, pepper and tarragon.   Reduce the heat and allow to simmer until slightly thickened.

Meanwhile add the chicken, mushrooms, bacon, pepper, onion, garlic clove and sweetcorn into a large frying pan and cook through

Par boil your potatoes for around 5 mins in a saucepan of salted water

Add the quark and fromage frais to the stock and and mix well.  Make sure that it doesn't boil or overheat. This should soon thicken up, but if not at 1 tablespoon of flour (3 syns) to thicken it.

Put the chicken & veg mixture in a oven proof dish and pour the sauce over the top, mix if needed.

Place the sliced potatoes over the top ensuring that there are no gaps and there is an even covering.

Spray the potatoes with fry light and bake in the oven for 30 mins on a medium heat, or until the potatoes are crispy.
