Recipe: Slimming World Stuffed Mushrooms




This is a great accompaniment to any meal or you could even have it as a starter.  Packed with super free veg and topped with cheese from your healthy extra allowance it is so tasty and easy to make.

Healthy Extras:-  A

You will need:-

4 Large flat bottom mushrooms
2 tomatoes- chopped
1 onion- diced
1 pepper- diced
Chopped coriander
lemon juice
35g cheddar cheese
1 Garlic clove, chopped

Method:-

Chop the onions, tomatoes, peppers, coriander and add to a frying pan on a medium heat.  Add the chopped garlic and lemon juice and fry off.

Pull the stems off the mushrooms in preparation for the filling

Once the veg is cooked through stuff it into the mushroom and sprinkle each one with cheese.  Bake in the oven for around 15-20 mins, or until the mushroom has cooked all the way through and the cheese has melted.
