Recipe: Slimming World Stuffed Chicken Wrapped in Bacon

This is a great recipe for many reasons.  It tastes great and can either be put in the slow cooker or in the oven!  Nothing better than getting home to dinner ready made!  I served it with salad, corn on the cob and peppered mash. It is Syn Free on extra easy.


You will need:-

2 large chicken breasts
6 Rashers of bacon, all fat removed
4 tbsp cottage cheese
2 tbsp chives
1 Garlic clove, crushed
Salt & pepper to taste

To serve
Salad and corn on the cob
Mash potato with lots of pepper

Method:-

Mix together the cottage cheese, chives, garlic, salt & pepper together to make the filling


Cut a slit into the side of each chicken breast and stuff the filling inside

Wrap each stuffed chicken breast with 3 bacon rashers (or enough to cover the chicken)

If slow cooking, wrap in tin foil and put in the slow cooker on low for up to 8 hours.  If oven baking, wrap in foil and cook for 30-40 minuets on 200C/fan 180C/gas 6
