Recipe: Slimming World Mac n' Cheese




Mac n Cheese has to be one of our faves.  When I make it I put in SO much cheese of all different varieties in and obviously this is a no go on Slimming World!  I came up with this recipe and it tastes really good!  It is syn free or 6 syns if not using cheese as a healthy extra.  You can add as many or as little veggies as you like and I served mine with some Spinach

Healthy Extras:-  A

You will need:-

300g dried macaroni
fry light
6 spring onions, thinly sliced
2 garlic gloves, finely chopped
200g cherry tomatoes, halved
400ml stock
200g fat free natural yoghurt
3 Tablespoons of Quark
2 tbsp Fat Free Fromage Frais
1 level tsp mustard powder
2 eggs, lightly beaten
120g extra light cheese (healthy extra or 6 syns per portion)
salt & freshly ground black pepper

Method:-

Preheat your oven to 200c or fan oven 180c/gas mark 6

Cook the macaroni as per the instructions on the packet, drain & set aside

Spray frying pan with fry light, add spring onions, garlic, cherry tomatoes, stir & cook for 2 minutes.  Transfer to a mixing bow and add the cooked macaroni.

Beat together the stock,tomato purée, yoghurt, mustard & eggs until smooth.  Pour over the macaroni, then stir in most of the cheese. Season and toss well.

Divide between 2 medium sized individual overproof dishes, sprinkle over the remaining cheese and bake for 15 - 20 mins.  You could even leave them in the fridge for up to 24 hours before you cook them
