Slimming World- Bacon, Egg and chip bake




This is a relatively quick and very simple dinner, and is Syn free on extra easy!  The tasty slimming world chips combined with yummy bacon (all visible fat trimmed off, of course!)

You will need:- 

Potatoes 
1 red pepper, deseeded and thinly sliced 1 yellow pepper, deseeded and thinly sliced 
Mushrooms, chopped
Tomatoes, chopped
4 eggs 
Salt and freshly ground black pepper 
Smoked paprika
Low calorie Garlic spray
4 rashers of bacon, all fat removed

Method:- 

Preheat the oven to 240ÂșC/220°C Fan/Gas 9. Peel the potatoes and cut them into 1cm thick, long chips. Place in a saucepan of boiling water and cook for 4-5 minutes. Drain carefully and spread out on kitchen paper to dry

Place the chips in a shallow medium-sized ovenproof dish or four individual gratin dishes. Spray with low calorie oil spray and sprinkle with salt, pepper and smoked paprika- bake for 10 minutes.

Remove from the oven and add the rest of the vegatables, bake for another 15 minutes

Make 4 wells in you tray and crack in the eggs, put back in the oven until the eggs are cooked to your liking
