7 Day Slow Cooker Challenge! Day 5- Hunters Chicken

Read Day 1 of the slow cooker challenge if you don't already know why and what I am doing!

Day 5- Hunters Chicken

This is my take on a hunters chicken, chicken breast stuffed with mozzarella, wrapped in smoky bacon and topped with BBQ sauce on a bed of crispy potatoes.


You will need:-
2 large chicken breast
20g ketchup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon cider vinegar
1 clove garlic, minced
1/4 teaspoon mustard powder
1 tablespoon of smoked paprika
Salt and pepper
1 Red Onion Sliced
 Mozzarella
1 pack smoky bacon
Potatoes

Method:-

In a small saucepan over medium heat, stir together the ketchup, sugar, Worcestershire sauce, vinegar, hot sauce, garlic, mustard powder and salt. Bring to a simmer, then remove from heat and allow to cool slightly

Cut open the chicken breasts and stuff with mozzarella, wrap in bacon and place on a large square of tin foil

Pour BBQ sauce over the chicken and wrap up into a lose parcel, repeat for each breast.

Peel and slice as many potatoes as it takes to line your slow cooker bowl, add salt, pepper and a dash of water. 

Cook on low for 6 hours, check the potatoes and if necessary leave on high for 30 mins to finish the potatoes.

Serve the chicken and potatoes, the chicken should just fall apart and be full of BBQ flavour.
