Recipe- Chocolate & Irish Cream Liqueur Cup Cakes

As it is St Patrick's day I thought I would come up with a great recipe to help with any celebrations you may be having (I love how we English get more excited about St Paddy's day than St George's Day!) These chocolaty cup cakes have a naughty dash if Irish Cream Liqueur in them, as well as in the delicious butter icing!


You will need:-
125g butter or margarine
125g caster sugar
2 eggs
75g Cocoa powder
6 tsp Irish cream Liqueur
125g self-raising flour

200g icing sugar
50g butter

Method:-

Cream the butter and sugar together in a bowl

Add the eggs one at a time and mix 

Add 3 tbsp of Irish cream Liqueur and mix together

Fold in the flour and cocoa powder until everything is mixed into a smooth mix

Put the mixture into cup cake cases until all the mix is gone and cook at 180c for 10-15

To make the icing, cream 50g of butter and the icing sugar together, add 3 tbsp of Irish Cream Liqueur and mix to a smooth butter icing. 

Once the cakes have cooled, top with lashings of butter icing.
