Recipe: Roasted Root Yums

I got this idea form someone that I work with after they told me what they had to eat that day, and I just had to try it myself!

It is basically every root vegetable that I could find in the house, and a few non root veggies.  I also used Saison root vegetable mix (which I will be reviewing separately soon) but you can use whatever herbs you like.  The addition of olives give a little salty kick, and if you like olives, I definitely recommend using them!



You will need:-

3 potatoes Chopped
2 Sweet potatoes Chopped
1 Red onion Chopped
3 parsnips Chopped
3 garlic cloves
5 Mushrooms Chopped
1 Red pepper
3 Carrots
Basil, thyme, rosemary, salt & pepper (or Saison! Root Veg Roast seasoning)
Drizzle olive oil
1 tin chopped tomatoes
olives (optional)
Feta, chopped

Add all the ingredients (apart from chopped tomatoes) into a large roasting tin, drizzle with olive oil and put in the oven at 200 degrees for around 25 mins, checking halfway through to stir

Add the chopped tomatoes (and olives) and place back in the oven for another 10 mins

Remove and serve with some feta on top
