Recipe: Lazy Freestyle Leftovers Breakfast



After cooking a nice Toad In the Hole yesterday I had a few (not many!) left over roast potatoes.   I have a habit of cooking for twice the amount of people that are ever actually here, meaning I need to be pretty resourceful with my left overs.

I guess you can call this my take on a bubble and squeak.


You will need:-

Leftover roast potatoes, but you could just fry some potatoes if needed

5 rasher of smoked bacon

Mushrooms

An egg per person that you are cooking for

Cheese

Smoked Paprika

Worcestershire sauce

Salt & Pepper to taste


Break the potatoes up with a masher or fork, not too much as you still want the texture

Chop the bacon and fry in a pan

Add the mushrooms

Add the potatoes

Keep moving everything around so it doesn't burn.

Add the salt, pepper, a few drops of Worcestershire sauce and a sprinkle of smoked paprika

Fry a couple of eggs to serve with it (I served mine over easy)

Dish out onto a plate, sprinkle with cheese
